I like "Customize" and "Dock" for managing all my apps. Otherwise, I'm with carmodyarc in that I only really use the default apps.
Oh yeah, and games. Solitaire, iPhysics, and the occasional TTR round when I'm really bored.

I too understand Apple's desire to maintain their brand's UI style across platforms, but I think they could have done it more subtly and more effectively. Forcing interaction paradigms and design styles on users is not the way to do it.
Frankly, I think Safari on Windows is hideous. It's beautiful - and my primary browser - on OS X, but it just looks so out-of-place on a PC (especially the awkward menu bar spacing, and other odd design decisions).
Yeah, a web interface of some sort. I'm trying to stay away from ftp and sftp/ssh.
I'm about to set up an account for my parents on my dev server so that they can share files with other relatives and was wondering if there were any applications out there that were a bit better than the basic Apache2 file list (what you get when you allow "Options +Indexes").
Something that's a bit easier to navigate and understand with maybe an interface for file uploading (multi-file?) would be really perfect.
Any ideas? (I'm running Ubuntu Dapper)
As an update, I grabbed the iPod touch yesterday (and love it). I figure I have 30 days or so to wait for a jailbreak. If not, I'll go back for the unlocked iPhone.
Yeah, I'm starting to lean towards the unlocked iPhone. I hate my Motorola Q's Windows Mobile and I'd like to be able to do it all on my iPhone.
So I'm in a bit of a rut here. I originally thought that the iPod Touch was the way to go for me. I'm on a Verizon plan for the forseeable future and at&t coverage sucks in my area.
However, I've been reading about problems with the iPod Touch's screen as well as the difficulty in "jailbreaking" them to run the same cool apps the iPhone does (http://www.tuaw.com/2007/09/15/the-state-of-the-itouch-jailbreak/). Also, I don't like the fact that Apple crippled the thing (missing Calendar features and no Mail app altogether).
I was planning on getting the 8GB Touch, but should I spring the extra hundred for the iPhone?
Yeah, I think something's wrong if it's going up to the 80's without much work. My MBP (2.4GHz Santa Rosa) is hovering around 46°C right now and I've only ever had it go up into the low- to mid-seventies and that was when I was messing around with Motion and other intensive stuff.
Is your fan kicking in? If you're usng smcfancontrol, it should tell you (the max is about 6000RPM).
Neither does Pocket IE for that matter. Touch devices are inherently incapable of "hovering" so it does kinda make sense.
One option would be for the browser to show a website's :hover effect on :active or :focus (basically a tap on the screen) but that could be weird.
If all else fails and the data is really important, there are some great services out there that you can send the bad drive to for hardcore recovery (Drive Doctors are good).
text editor + transmit + css editor + terminal + books + more = whoah.
I don't feel the need for a dedicated CSS editor, nor do I need the integrated documentation. The live preview is kinda cool, but with multiple monitors, I can just keep a web browser open in one and have it automatically refresh every second. Also, the terminal (while useful during deployment and such) isn't as integrated into my development workflow to requrie a spot in my primary app...
That leaves Coda as only a text editor and FTP client which I already feel like I have the best with TextMate (and its bundles) and Transmit. TextMate's FTP link with Transmit is hack-ish, but it works and it'll probably hold me over until TextMate 2 comes out.
I like what Coda is trying to do (and love Panic's applications in general), but I'm already really comfortable with my system and it's going to take alot more to make me switch.
Gmail, Google Notifier, and Gmail + Growl
I have the glossy MacBook (not pro) screen and I think the colors come through really well.
I don't have much experience with the matte Pro's, but unless you'll be frequently designing near the surface of the sun, you may want to consider the clarity of the glossy screen.

Seriously though, I've installed it on my MacBook for testing and don't mind it at all. I can't get it to run all the fancy effects, but what I can see looks pretty nice.

I hate that they so often rank at the top of Google's search results when they're obviously gaming the system since their content is only made available to the bots and not people. Google should block them or at least penalize them somehow...didn't know about that trick though, thanks posure.
